Rosemary: A Valued Ingredient in Mediterranean Cuisine

Rosemary is a key ingredient in Mediterranean cuisine and is used to add a distinctive flavour and aroma to many dishes. It is particularly popular in dishes such as meat, cheese, soups, sauces and vegetables, where it adds a depth of flavour that is appreciated in both home and professional kitchens.

Growing Rosemary

Rosemary is relatively easy to grow, especially if given the right conditions. In colder climates, it's beneficial to grow rosemary in pots that can be stored in bright but cool rooms during winter, preferably at temperatures up to 10°C. Outdoors, rosemary thrives best in sunny beds, rock gardens or near the coast. However, it is important to protect the plants from frost.

Rosemary requires plenty of sunlight and should be planted in containers with deep soil mixed with sand for good drainage. Seeds are best sown from April to May and can take up to 4 weeks to germinate. A good method is to chill the seeds for a week before sowing to improve the germination process.

Young plants need to be watered regularly, while adult plants can tolerate longer periods without water. Rosemary plants develop their aromatic properties between June and September. When grown in pots, rosemary plants can reach a height of around 50 cm, while they can reach up to 120 cm if grown in the garden. To promote denser growth, it is recommended to prune the tops of the plants regularly.
